Lavender is the most recognizable plant in this entire range. Almost everyone knows the smell before they know the plant.
What it is
Lavandula is a genus of 47 known species in the mint family, Lamiaceae, native to the Mediterranean, the Middle East and India. Its documented history runs back more than 2500 years. Ancient Egyptians used it in mummification. Romans used it in bathing, and the name itself likely comes from the Latin lavare, to wash. It stayed in constant use through medieval and Renaissance Europe.
Taste and smoke
Floral and slightly sweet, with the same character as the scent but softer. The smoke is mild. The flavor lingers, which is unusual for a flower and is the reason lavender is used sparingly.
What's in it
Lavender carries more than 100 identified constituents. The two that define its scent are linalool and linalyl acetate, the same compounds that make it a fixture of the perfume industry.
What to pair it with
Chamomile or lemon balm for something softer and more floral. Sage or marshmallow for an earthier balance. Lavender is strong enough that it will lead any blend it's in unless you're careful with quantity.
